Emily is a mother of four, so besides being an expert in what kids like, she also knows that moms don't have much free time to come up with gourmet meals. Most of the time cabbage on St. Patrick’s day is eaten boiled with meat…no wonder so many people think they don’t like cabbage! This salad is a quick, yummy way to eat an important cruciferous veggie, and is a definite upgrade from the mushy stuff that usually comes along side corned beef.

Feed this to your kids who like licorice! Fennel is in the same family so kids who like licorice are inclined to like this salad. Especially if they know its name.

I generally eat a salad a day—sometimes even for breakfast! I love them, they’re so easy to make, and they really keep my show on the road (especially if I add beets, but I’ve never read a study to tell me why). If more folks ate daily salads—including kids—we’d be a healthier group!
