bunless buffalo dogs PDF Print E-mail

This is the perfect recipe to have dinner ready and waiting when you get home from after-school soccer practice/violin lessons/whatever. It took me all of FIVE minutes to prepare. (I am not fond of it, but my kids loved the stuff.) If you're trying to eat less meat, this is a great way to get the hotdog flavor without so much hotdog, and without a bun (brown rice is much better for us than a processed white hotdog bun!) Plus, if you use buffalo hot dogs, you'll get a good serving of omega-3!

ingredients

  • 4 c. broth or water
  • 3 buffalo hot dogs, sliced
  • 1 3/4 c. brown basmati rice
  • 1/2 yellow onion, chopped

how to make it

  1. Chop the onion, slice the hot dog, and rinse the rice.
  2. Dump everything into a crockpot set on high and stir. Cook for 3 hours.

helping hands

Kids can help wash the rice and pour water.

notes

  • You can use a mixture of brown rice and wild rice for added iron and taste.
  • I use vegetable broth. If you use water, add more onion and/or garlic for a richer flavor.
