This is the perfect recipe to have dinner ready and waiting when you get home from after-school soccer practice/violin lessons/whatever. It took me all of FIVE minutes to prepare. (I am not fond of it, but my kids loved the stuff.) If you're trying to eat less meat, this is a great way to get the hotdog flavor without so much hotdog, and without a bun (brown rice is much better for us than a processed white hotdog bun!) Plus, if you use buffalo hot dogs, you'll get a good serving of omega-3!

Active Work Time: 5 minutes Time to Taste: 3 hours Servings: 6 servings No: dairy, eggs, gluten, nuts
ingredients
- 4 c. broth or water
- 3 buffalo hot dogs, sliced
- 1 3/4 c. brown basmati rice
- 1/2 yellow onion, chopped
how to make it
- Chop the onion, slice the hot dog, and rinse the rice.
- Dump everything into a crockpot set on high and stir. Cook for 3 hours.

Kids can help wash the rice and pour water.
notes
- You can use a mixture of brown rice and wild rice for added iron and taste.
- I use vegetable broth. If you use water, add more onion and/or garlic for a richer flavor.
