apple cranberry sauce PDF Print E-mail

This is an impressive upgrade from regular apple sauce, both in color and nutrient power-packing.  In the winter, I heat it up and put it in my kids' lunches (in an insulated container) for a festive treat.

Time to Taste: 3-4 hours
Servings: 8
No: dairy, eggs, gluten, nuts, soy

ingredients

  • 2 oranges, washed, quartered, and seeds removed
  • 5-6 apples, washed, quartered, and seeds removed
  • 8 oz. cranberries, washed and picked over
  • 1 cup water (or more)
  • 1 Tbs. cinnamon (or more)
  • 1/4 cup agave nectar
  • 1 tsp. stevia

how to make it

  1. Place orange slices (yes, with the peels) in a food processor, and whiz around until smooth.
  2. Add apples (yes, with the skins) and blend/pulse until the apples are coarsely minced (this may take two batches, depending on the size of your food processor bowl).
  3. Pour all ingredients into your crockpot set to high, and cook for 3 or 4 hours.
  4. When the sauce gets to the consistency you like, remove from heat and enjoy either hot or cold!

My kids are great produce washers, and since the apple and orange skins remain part of the recipe, scrubbing with a veggie brush is an important job (just ask my three-year-old!) Measuring is good practice for my eight-year-old, and gives us the opportunity to talk about fractions and math in general.

notes

  • If you think you don’t like cranberries, this recipe may convert you.
  • This recipe has so many more antioxidants than normal applesauce, and much less sugar than many cranberry sauces.
  • Cranberries can neutralize several virus species, including some strains of E. coli. They block pathogens from glomming onto our urinary tracts (among other bodily parts), thereby helping prevent infections.
  • Cranberries have also been shown to help protect against cancer and macular degeneration.
