chocolate chip cookie dough PDF Print E-mail

As someone who frequently ate “real” cookie dough for breakfast (hard to believe now, but…), this is my dream-come-true! No wheat or dairy or white sugar, but lots of good fats, protein and anti-oxidants (and it's a 'raw food')! It’s a favorite in my classes.

Active Work Time: 5 minutes
Time to Taste: 5 minutes if spooning, longer if rolling into balls
Servings: 2 1/4 cups, or 40 smallish cookie dough balls
No: dairy, eggs, gluten, soy

 

ingredients

  • 2 cups raw macadamia nuts
  • 1 cup raw sunflower seeds or brazil nuts
  • 1/4 cup xylitol (or more, if you like)
  • 3 packets stevia
  • 1/2 cup raw cocoa (or cacao) nibs (available in health food stores)

how to make it

  1. Blend all but cocoa nibs in food processor fitted with an S-blade. When just smooth, add nibs and process until nibs are the size you like best (bigger nibs seem more like chocolate chips).
  2. Either serve in a big bowl with lots of spoons (to insure no double dipping), or roll into dainty little balls, and serve.

This is definitely on of my youngest son's favorite recipes to help make and eat! He can pretty much help on every level since there are no knives and no heat!

notes

  • Serving a bowl of “cookie dough” with spoons “planted” all around brings smiles from all the recipients. This is a good dessert to serve at a “comfort food” gathering.
  • I always recommend using RAW, ORGANIC nuts. Raw nuts still have all the important oils and enzymes…I’m not saying there’s no value in toasted nuts, but the value is significantly depleted by heat, so…go raw! (Getting the good stuff from the “cookie dough” is part of the reason I don’t turn the dough into cookies.)
  • Cacao nibs are the natural form of chocolate. They are “chocolate beans,” basically. They’re reported to be good for your skin (lots of sulfur and magnesium), and improve your “feel-good factor” (the influence of seratonin). They offer LOTS of phytochemicals and anti-oxidant qualities At my natural food store, I can buy them in bags or in bulk (bulk is usually cheaper, but not always). Check the prices online, too.
  • Even though the ingredients are expensive, a little goes a long way!
  • Some people have issues with xylitol (stomach upset), but in small amounts it’s usually fine. Just be sure it's GMO-free!
