ingredients

  • 1/2 cup ghee
  • 3/4 cup honey
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 cup rice flour
  • 1 cup chesnut flour, preferably stone ground
  • 2 tsp. xanthan gum
  • 1 Tbs. cinnamon, ground
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. sea salt
  • 1 1/2 to 2 cups rolled oats
  • 1/2 cup chopped almonds
  • 1/3 cup raw chocolate (AKA cacao beans), optional

 

how to make them

  1. Preheat oven to 375º (you'll turn it down to 300º for the second baking).
  2. Whiz the chocolate around in your food processor about 20 seconds. Remove to dry ingredient mixing bowl.
  3. Cream ghee and honey in the food processor (don't worry about cleaning off chocolate remnants). Pulse in eggs and vanilla.
  4. Combine flours, cinnamon, baking powder, baking soda and salt in a big mixing bowl. Stir with a whisk to mix completely.
  5. Add the wet mixture to the dry ingredients. Stir in the oats and almonds.
  6. On a greased baking sheet, shape dough into 2 (10x3x1-inch) logs.
  7. Bake the logs at 375º for 12-15 minutes, or until lightly browned. Cool 5 minutes; place the logs on a cutting board.
  8. Cut each log into 1/2-inch strips; and place on cookie sheet (they won't spread, so they can be placed relatively close together). Bake at 300º for 25-30 minutes or until you think they're just the right crispness for dipping.

  • Oats are controversial in the world of gluten. Some sources say oats can be gluten free if they aren't cross-contaminated during growing or processing. However, recent studies out of Italy report that the gluten-or-not status of the oat depends on the type of oat. If you are celiac, please be cautious if you choose to consume oats.
  • Chocolate is one of the richest sources of antioxidants and a terrific source of magnesium (great for your heart).
